Chef Luke received his formal training at the esteemed Culinary Institute of America in Hyde Park, NY, in the late 1980's. Luke learned much of his coaching ability through his involvement in organized sports (Hockey and Soccer), which give him a "Coach Luke" approach to how he manages his teams. His ability to assess both your current skills and potential, and to place you in positions to grow and learn, will offer you an exceptional "leg up," whether you are planning a more formal, college training or you desire to bypass the college route, entirely. Under his coaching, you can learn nearly every aspect of kitchen hospitality, from the technical kitchen skills of knife use and carving, up to operational kitchen leadership. You can learn every aspect of cheffing through your own, hand's-on experience.
You will also get the chance to work beside, and under the guidance of, Chef Falon Smith. Chef Falon trained at the Culinary Art Institute in Nashville, and has been in charge of kitchens around Nashville for over 12 years. Under her leadership, you can expect to turn creativity into delicious food offerings and learn how to execute a smooth shift. She makes professional cheffing look easy.
